Smorgsabowl by Caryn Carruthers

This is a really cool cookbook that offers Gluten Free, Vegan, Paleo, and Dairy Free recipes (all with symbols at the top for ease of recognition), and since one of my best friends who lives by me is vegan, we decided to try out two of the recipes, one which was already vegan, and one we modified just slightly to be vegan. We made the “Egg Roll Bowl” – which was not vegan originally, but we switched out the pork for impossible meat and then it was. Caryn was not kidding with portion sizes! She said that this recipe would make four large bowls and it DID! 10/10 delicious, and didn’t even need the additional sweet chili sauce that it called for. We also made the vegan ranch dressing, which my partner also tried. Taste on this one was 8/10 for me, but it is not a dressing the
way I was expecting it to be. It was much more like a hummus/dip. Still absolutely delicious, but I don’t think it would be my salad dressing of choice.

This book has a ton of different recipes of various difficulty and taste, and it was incredibly easy to follow. It is one of the easiest cookbooks I have read in a while. I will say, that it is kind of difficult to follow some of the recipes unless you have some specialized equipment, and that is a little disappointing. We wanted to make the Thai Noodles as well, but it required a spiralizer, which I didn’t have, and there isn’t an easy substitution for that, so we had to skip that recipe for now. I will definitely be trying other recipes from this book, and messing with some of the ingredients to make them suit my tastes a bit more, since it is very easy to do. Check it out now wherever you get your cookbooks!
